Can I use fresh dill when pickling?

In place of the dill seeds, you can substitute 5 heads of fresh dill (the yellow flower portion) or 2 teaspoons dried dillweed for each jar. You can also add 1/2 teaspoon of dried oregano or 1 teaspoon dried thyme to the mix. Place the seeds in a small bowl and cover with cold water.

Let sit for 10 minutes, then strain the liquid through a fine-mesh sieve into a large bowl. Add the remaining ingredients and mix well. Store in an airtight container in the refrigerator for up to 3 months.

Is dill still good after it flowers?

Dill leaves are most flavorful just before the plant flowers and lose flavor rapidly post-bloom. It’s not a good idea to pinch off flower buds in order to extend the harvest time. The best time to harvest Dill is in late summer or early fall, when the plants are in full bloom.

This is also the time when they’re most susceptible to frost damage. If you can’t wait until the end of the season, you may want to plant Dill in early spring or late fall to maximize the amount of time you have to enjoy it.

Take the plants together in a bundle and tie them together with rubber bands. The herbs should be dried for about two weeks. After the leaves are removed from the stems, store them in a container in the refrigerator for up to two months.

Can you freeze dill heads for pickling?

In the winter and possibly until the spring, intact dill sprigs will remain usable. To maximize the freshness of the product, it is best to freeze both the leafy stems and the flower heads.

Can you use the whole dill flowers in pickles?
